After much baking and eating to try and perfect a chocolate cookie, this recipe is as close as I think I can come. This is a combination of other recipe's I've seen on here and other websites. The secrets in my opinion are 1) The types of flour used (option but I think they make a difference but you can use all purpose flour if need be) 2) The pudding 3) The chilling and 4) The dark brown sugar instead of light. Please taste them and tell me what you think!! My family thinks they are very chewy and yummy!

This is a common base to many latin and island meals. Many countries have their own take on it and this is one with a Puerto Rican and Dominican blend. It has a lot of components so you can harmlessly omit one or two without much harm to the recipe. This sofrito can be added to many recipes such as soup, beans, stews and can also be used to marinate meats. This also keeps in the fridge for a few weeks and can be easily frozen.

YUM! This is great. I got this from my mother-in-law (who is Puerto Rican) and it turns out excellent! Rich sauce, flavorful chicken and potatoes served over hot steaming rice. This can also be adapted to be made in the slow cooker (season the chicken, brown in a skillet and then dumpt it and the rest of the ingredients in the slow cooker and cook on low for about 4-5 hours, depending on your slow cooker).**Sofrito-you can use my recipe "Sofrito-Puerto Rican/Dominican", use someone else's or buy Goya Sofrito or Recaito.
