    I have been poaching eggs in the microwave for many years. For me this is the best way to prepare poached eggs for 2. It is quick, easy and almost foolproof. Please make sure you use a toothpick to pierce the yolk before cooking or it will explode!

    This recipe comes from Gifts from the Southwest Kitchen. The spiced chocolate mix is reminiscent of the popular Mexican varieties. This makes 10 servings or can be divided into individual servings (1/4 cup each) and given as a gift with a nice mug.     This is a wonderful mix that is quick to mix up and will keep up to 6 months when stored in a container with a tight-fitting lid. Use this mix to add zip to cake batters, quick bread, whipped cream, pancakes, muffins, etc. If the recipe calls for various spices, just add up the amounts and sub this spice blend.
