    I found this recipe while looking for something different to do with cauliflower. It was very easy to put together and a hit with the whole family. You can easily change the amount of ingredients to suit your taste or fit what is in your fridge.

    I got this recipe from my Aunt's friend at a New Years Eve party a few years ago. Everyone raved about it then and every time I make it, people go on and on about how good it is. It really is so simple to make and has very few ingredients. I usually serve it with Ritz crackers. Although I never have made this in a low-fat version, I'm sure you could used low-fat cream cheese and/or low-fat sour cream.

    I was disappointed while looking for veggie burgers the other day and said to my 21/2 year old, "Mommy needs to learn to make her own veggie burgers." Well, the veggie burger gods must have heard me because there was a recipe in the newest Parents Magazine a few days later. I tweaked that recipe and came up with this super easy and super yummy veggie burger. I used chickpeas to make my first batch, but I'm sure you could use other beans and play around with herbs and spices. The burger have a well rounded taste. They DON'T taste like a pile of beans.

    My mother-in-law makes a chicken dish similar to this that my husband and all of his family loves (I'm a vegeterian, so I've never tasted it). One night I wanted to make it for my husband but couldn't get in touch with my mother-in-law. This is what I came up with from my husband's description and my vague memory of how she cooked the chicken. My husband and 2 year old son loved this chicken! Don't be intimidated by the amount of onion, garlic, and ginger. The chicken ends up with a subtle flavor. You don't have to be exact with the ingredients or measurements. Add more of what you like and less of what you don't. It's all about the slow cooking at a low temperature.

    We bought ground cherries at our local farmer's market last weekend...They looked so interesting and had such a unique taste. After searching and searching, I found a few recipes for ground cherry pie. This combines the best of a few different recipes. We didn't have quite enough ground cherries to make a large pie, so I used a silicone cupcake mold and made mini pies. Delicious served alone or with icecream!
