    Kabobs look special & you can have a party on a plate with minimum effort. After the preparation (which can be done ahead) the recipe goes together quickly and utilizes an indoor contact grill. The meatballs are soft, so cooking on an outdoor grill would require adjustments and presoaking the bamboo skewers. I don't presoak the skewers when using a foreman style grill. 30 min prep & 30 min chill time

    This is an Alton Brown recipe. Grains of Paradise have a taste that is a mix of mild black pepper, cardamom, coriander and ginger and with a luscious citrus aroma. Long used in Middle Eastern, North and West African cuisines, this spice is starting to gain in popularity throughout other regions of the world. The two major exporters of Grains of Paradise are in Ghana and Nigeria. Grains of Paradise are also known as alligator pepper, melegueta pepper (not to be confused with Brazilian Malagueta pepper which is actually a member of the Capsicum family), Guinea pepper, ginny pepper and Roman pepper. Helpful hint; you will enjoy its fullest flavor if you grind it just before adding to a dish (or just before serving).

    A dear friend shared this recipe with me many years ago. The recipe became a favorite & I have used it for everything over the years. It has made it way to many a Girl Scout mtg, school party, potluck, etc. Tea Cakes became my family's favorite cookie at the holidays. It isn't Christmas without a platter of these & a bag for everyone to take home. They are good plain and sweeter with the glaze & icing.
