These flavourful sausages have a nice texture and are really healthy. Perfect for barbecues, casseroles, breakfasts etc. Feel free to experiment with herbs and different types of beans. I fyou can't find quinoa flour, try substituting a different wheat-free flour.

    Recipe #387206

Low fat tiramisu that will impress your guests all the same. Serve in individual wine glasses with long teaspoons. If desired, the ingredients can be tweaked to suit individual tastes e.g. add nuts, increase sugar etc. Don't be intimidated by the long list off instructions, they are mostly to detail how to put the tiramisu together. Can be made a day ahead. Enjoy!

    Recipe #387188

This light, refreshing rice noodle soup is perfect for both Summer and Winter. If needed, dried herbs can be used in place of fresh ones. Add tofu, cooked chicken, seafood and mushrooms as desired. White cabbage can be added instead of bok choy and a small amount of leek or onion is also good. The soup will freeze well but noodles tend to go mushy when reheated.

    Recipe #387146

This dish is wonderfully light and simple, but vibrant and bursting with flavour at the same time. The rice paper wrapper absorbs the flavour, whilst sealing in moisture for an impressive and attractive meal. The flavour is not at all overly salmony...even my little sister likes it. It is great served with stir-fried veggies or fennel bulb, and I suspect it would taste delicious with rice or potatoes for a more substantial meal. Prep time includes marinading.

Next time someone lectures you about unhealthy eating, whip out the excuse, "It could be worse, I could be eating choco-ginger snowballs!" Unless, of course, you are actually eating choco-ginger snowballs in which case, they're right. No need to fear though, one bite and they will soon come over to the dark side. Also dubbed 'ginger heart attacks' these wickedly delicious snowballs make a delicious treat, albeit a very rich and unhealthy one. Adapted from a failed ginger slice recipe, these are easy to make and disappear even faster. Enjoy. Cooking time is for melting of butter and chocolate.

    Recipe #377900

Healthy, tasty and suitable for coeliacs, those with lactose intolerance and vegans alike. Despite their healthiness, these taste delicious and the recipe can be adapted to suit any tastes and i recommend sprinkling the tops with a little muesli and sugar and serving them warm from the oven and drizzled with yoghurt if you are not lactose intolerant. For a nuttier flavour, the vegetable oil can be substituted for nut oil. Chickpea flour can be substituted for rice flour if you don't like the taste. Variations include adding apple, dates, cream cheese, cranberries and raisins to name a few...the possibilities are endless! Enjoy!

    Recipe #377341

A hearty tasty loaf, the perfect alternative for vegetarians at barbecues, picnics and homemade dinners. Adding courgettes, peppers and other vegetables works very well as well as nuts, seeds and even dried fruits!! I would recommend cooking them in individual portions in a muffin tin but a loaf may work as well.

    Recipe #377316

A quick recipe for an interesting vegan cheesecake. A pre-baked pie crust can be used in place of the one in the recipe. Wheat flour can be used in place of rice flour for a crust that isn't gluten free.

    Recipe #377254

A deliciously filling pie loved by vegetarians and meat-eaters alike. Perfect for taking to picnics and potlucks or served with soup on a winters day. A pre baked bought pie crust can also be used. The pie crust works well with both wholewheat and half and half flour as it gives the crust more substance, however, white flour can be used if preferred. This pie can also be made without a crust on top. It works just as well, cuts down on fat and still looks and tastes delicious.

    Recipe #377134

Two deliciously crumbly cookies sandwiched together with a custardy filling...a family favourite! Edmonds is a New Zealand recipe staple, a fail-proof cookbook. In New Zealand I used to make these regularly for my family...they never lasted long!!!

    Recipe #377132

Sure to impress the pickiest, most health-concious of eaters alike. I am reliably informed by my younger sister that the bean dip also makes a fantastic healthy pasta sauce. Also, the addition of haloumi, feta or mozarella could add to the flavour. Roast tinned peppers also work and I buy pre-grilled frozen eggplant where possible..

    Recipe #375188

A delicious, nutritious main meal with fantastic flavours and textures. Recipe is adapted from the Optimum Nutrition cookbook.

    Recipe #374803

Light, crispy, chewy, sugary cookies with a cinnamony, gingery, nutty taste. Other ingredients such as rolled oats, raisins, chocolate chips or any other ingredient of your choice can be added to taste.
