This is a combination of a few different risotto recipes since I couldn't find one that was exactly what I wanted. I wanted to remember how I put this together so next time I make it I won't have to guess!

    Recipe #428232

The original recipe came from a whole grains cookbook and used whole wheat flour instead of spelt, but I'm starting to experiment with spelt flour in my breads and made a few adjustments. It turned out fantastic! A light whole grain bread with great flavor, perfect for sandwiches! You could also use any other whole grain flour instead of spelt.

    Recipe #428090

My husband asked me to recreate a spicy Thai noodle dish he had while traveling (that I had never tasted before)...after a little trial and error I came up with this and we love it! You can use just about any protein you like and if you want it really spicy just add more thai chilis or red pepper. If you can't find thai basil you can use other basil varieties like spicy globe or cinnamon or just leave it out, but it does add a nice flavor.
