I noticed that while there were several pork parmagiana recipes on Food.com, there was nothing without breadcrumbs for those of us needing gluten free/low carb. Here's a very quick crumb-less alternative I cooked up which was pretty low-calorie but still passed the husband and son taste test!
Found on another recipe site, storing here for easy access as it's a family staple! Our toddler doesn't care for pumpkin mash or pieces but loves this creamy (but no cream involved) pasta, as do his parents!
Slightly unusual sweet muffin recipe - but very tasty! Substitute regular baking powder and salted butter if you prefer. Best type of pumpkin for this is butternut, but the first time I tried it with some leftover from a massive Queensland Blue my dad grew for me, it was still pretty good.
We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me. This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead. These are good on turkish breadrolls or ciabatta rolls with salad of your choice.
Very simple delicious pineapple muffins - my recipe uses no-sodium baking powder, but if you're not on a low-sodium diet you can use the regular stuff. Use a can of crushed pineapple somewhere between 500-600g (about 20 ounces)
Very simple white bread recipe for breadmaker (if you're clever you can adapt for oven!) Whole wheat flour could be substituted. This is originally a medieval Tuscan recipe, created by peasants who couldn't afford the high taxes on salt. Perfect for those of us on low-sodium diets!
