My mom made this for my 19th birthday (according to the Tamil calender, this year it's a day before my "real" birthday) and I was so touched and thrilled that she took the effort to make me something special that I would've posted this recipe even if it wasn't fabulous. Well, but you know what... it IS fabulous!!! The sweetness of this recipe is just right for me, but some of you may need to make this sweeter according to your personal tastes. My mom made this without the dates (which I don't like) and orange rind, but the original recipe includes them. Please note that prep. time does not include cooling time. This is from "Sweet Encounters" by Sanjeev Kapoor.

I wasn't quite sure what to call this, because while it is sort of a fruit salad, there's too much "liquid" in here to call that part the "dressing". This recipe has basically 4 components: yogurt, nut butter, sweetener, and fruit. The yogurt adds tartness, the nut butter adds richness and protein, and the sweetener... well, sweetens! Feel free to experiment with different fruits, yogurts, nut butters and sweeteners, and see what flavour appeals to you the most! With 8 grams of protein, this bowl-'o-nutrition is a great way to kickstart your day!

Desperate for something soothing while battling with a runny nose, I made this today using whatever I had on hand, and relished every bit of it! This is great for the cold weather, and just the perfect remedy for red noses and itchy throats... and it tastes wonderful as well! Please note that microwave times with vary depending on the manufacturer.

This is one of the signature dishes of North India, and is spicy, aromatic, flavourful, and simply out of this world! For the authentic feel, try to stick to the original recipe ingredients as much as possible, but you may also use suitable substitutes as mentioned. This is from "Vegetable Delights" by Malini Bisen. Note: Prep. time does not include pre-soaking time for the beans.

I found this recipe for a beautiful and tasty soup made with pureed carrots and fresh dill at allrecipes.com, and was so blown away by it's taste that I just HAD to post it here. Warm garlic bread makes the perfect accompaniment for this velvet-textured, heartwarming soup. Enjoy!

Quick, because it's microwaved, and zingy because of the unsweetened orange juice! Try this for a healthy, nutritious and simply delicious start to your day!

I made this adapting the recipe for biscuits on the Bisquick box, and really enjoyed the results. This is not a particularly sweet biscuit recipe, which makes it a wonderful accompaniment for your morning cuppa! You can experiment by adding chocolate chips in the batter for added sweetness, or increase the amount of sugar. This tastes best served warm with a pat of butter or maple syrup.

Here's a unique, light, egg-free version of sponge cake, and it's low fat and low cal as well! It's quick and easy to make, and can be dressed up with topping or frosting for an impressive dessert. This recipe is from www.tarladalal.com.

I put this together tonight when there was nothing appetizing to eat at home, and I didn't feel up to any sort of elaborate cooking. This makes a fantastic, light, summer meal on its own, or can be served with warm garlic bread. Adjust the spices to suit your taste.

I found this recipe in the book that was packaged along with my microwave. I haven't tried it yet, but it sounds fabulous!

Microwave cooking is great for people in a hurry. Sandwiches like these can be heated in a paper plate covered with a paper napkin; so there's no extra washing up. And these sandwiches are particularly tasty too!

Another yummy recipe from my Microwave cookbook. Ready in less than 15 minutes, this 3 ingredient side dish is easier than apple pie :-) Really...

I made this for my sister last night, and she raved so spontaneously that I realised this was probably good enough to post here! :-) Personally, I would use less of the bell peppers, but she loves them! You can also add some fresh corn kernels, if you have them... play around with this recipe as much as you want!

Posted in response to a request. From "The Vegetarian Menu Book" by Vasantha Moorthy. Note: Prep. time includes overnight fermenting time.

This makes a great, nutritious breakfast drink with a nice "peanutty" flavour. It's a great way to get your fruits AND your protein first thing in the morning!

These have to be the best banana muffins I've tasted! I found this recipe on Allrecipes.com and tweaked it to make it egg-free and low-fat. These muffins taste best fresh from the oven, and also are the perfect, healthy way to start your day!

This recipe fits the bill in my search for egg-free quick breads. It tastes great fresh from the oven. You can make this vegan by using maple syrup instead of honey, and soy milk. It is not a "sweet" bread, so if you want to make it sweeter, increase the amount of honey.

Perfect for a wintery morning, this recipe makes two small cups of coffee, reminiscent of the coffee you get in roadside stalls on highways here! You can add sugar if you want; I like it as it is.

An absolutely delicious done-in-a-snap snack, or breakfast treat (if you double/triple the recipe) that's as much fun to make as it is to eat! You end up with a slice with pretty, circular patterns, that's soft and sweet on the top, and crisp at the bottom!
