    It's really hard to find a recipe for eggless pancakes, and after lots of searching, I found a few pancake recipes and fine-tuned them to come up with this one, which is awfully easy and pretty darn yummy as well! It tastes wonderful with honey, or, if using apples instead of bananas, apple jam! It can easily be veganised using soy milk, or a similar substitution.

    This is my very own, 100% original recipe for an authentic Indian "pulao". The word "pilaf" is distortion of the word "pulao" which simply means a rice dish cooked with veggies and spices. This tastes great with a spicy raita, or with plain yogurt. Using margarine makes this a vegan.

    I wasn't quite sure what to call this, because while it is sort of a fruit salad, there's too much "liquid" in here to call that part the "dressing". This recipe has basically 4 components: yogurt, nut butter, sweetener, and fruit. The yogurt adds tartness, the nut butter adds richness and protein, and the sweetener... well, sweetens! Feel free to experiment with different fruits, yogurts, nut butters and sweeteners, and see what flavour appeals to you the most!     This is a quick and hearty vegetarian meal for one that I cooked up tonight for dinner, and it doesn't call for a pizza base, sauce, or special cheeses! It's a bit "upside down", with yummy parmesan cheese in the crust, followed by a layer of sliced tomatoes, which acts as the "pizza sauce".     I made this adapting the recipe for biscuits on the Bisquick box, and really enjoyed the results. This is not a particularly sweet biscuit recipe, which makes it a wonderful accompaniment for your morning cuppa! You can experiment by adding chocolate chips in the batter for added sweetness, or increase the amount of sugar. This tastes best served warm with a pat of butter or maple syrup.
