I was looking for a non-chocolate cake (weird, huh?) for my best friend who returned from Germany after a month and a half. I found this recipe on www.allrecipes.com, and since my friend's a coffee-holic, I thought she might like this cake. Well, it turned out great, except that it just refused to budge from the pan (probably because the of the raisins, which tended to settle at the bottom)! So I cut this into pieces in the pan itself, and then took them out separately. This makes for a fabulous, and surprisingly low cal dessert and matches wonderfully with a dollop of ice cream. Personally, I would use a little less sugar and raisins, and omit the allspice... 'coz I'm a coffee-holic too! Hope you enjoy this one! (Prep. time includes cooling time for the coffee-mixture.)

Call me crazy, but I thought this one up in my head at 11:30 at night while watching a Formula 1 race on TV! After the race, at 12:30 in the morning, I made this using three slices of bread to see how it would turn out. I meant to "taste" one, and leave the rest for the rest of my family, but I should've known better, really...Try this one, I promise you'll love it as much as I did!

Here's a unique, light, egg-free version of sponge cake, and it's low fat and low cal as well! It's quick and easy to make, and can be dressed up with topping or frosting for an impressive dessert. This recipe is from www.tarladalal.com.

I put this together tonight when there was nothing appetizing to eat at home, and I didn't feel up to any sort of elaborate cooking. This makes a fantastic, light, summer meal on its own, or can be served with warm garlic bread. Adjust the spices to suit your taste.

This spicy rice delicacy is a perfect main dish for when you have lots of other last minute preparations, since rice cooks perfectly in a pressure cooker. Sprouts are easier to digest and abound in protein, calcium, iron as well as vitamin C. Serve with a chilled 'raita' or plain yogurt. This recipe is from www.tarladalal.com.

In need of a comfort food fix? Treat yourself to a big mug of creamy hot chocolate, Mexican style, with this quick-as-a-wink recipe. If you think the weather's too hot for hot cocoa, find a place that well air-conditioned... coz this recipe is fantastic all year round! This is from www.verybestbaking.com, a Nestle website.

In Tamil, Keerai = spinach. This recipe has been in my family for absolute ages, and is unfailingly on the table at lunch every Sunday... and we'll never get tired of it! :-) This is a very nutritious stew that's perfect over steamed rice. A spicy pickle or condiment is traditionally served along with this. Or, you can just have the stew as a, well, stew or soup! Hope you like this one!

Dry milk adds texture and protein without fat or a lot of calories. Try this easy concoction with your favorite fruit: strawberries, blackberries, bananas, kiwi, peaches or cherries, for example. I use apples or bananas, and even chickoos (a sweet, brown-coloured fruit that we get here). This recipe is from www.verybestbaking.com, a Nestle website.

Chunks of potatoes, mustard and green beans combine with shallots for a colourful vegetarian potato salad. This is great for potlucks and picnics, and makes a light summer lunch along with a tall glass of fruit juice and garlic bread. This recipe, oddly enough, is from www.verybestbaking.com, a Nestle website.

This is from www.meals.com. When I made it, I substituted dry milk powder for the evaporated milk, thinking it was the same thing! As a result, my pudding ended up with the consistency of a fudge bar! But this tastes fantastic, so I'm sure it makes a fabulous pudding when you use the RIGHT ingredients! :-) Enjoy!

To beat the heat of the Indian summer, you gotta have something that is light and refreshing that'll cool you down. Lassi is very popular in India, and is a salted yogurt drink, mixed with some seasonings. This is a great accompaniment for a light lunch consisting of salad and fruit. Try it!

I found this recipe at MayoClinic.com and tweaked it a bit by adding my choice of herbs and seasonings, which adds a lot of zing to this otherwise ordinary recipe. This makes a very hearty dish and serves as a meal, accompanied with fruit juice or salad.

I found this recipe on allrecipes.com and made it ages ago, and positively LOVED it! Then, for some odd reason, I forgot all about it. Today, when I was going through my allrecipes cookbook, I rediscovered it, and just HAD to post it here. You gotta try this... it's definitely worth all that chopping!

This is a nutritious, low(non?)-fat veggie main dish that I thought up on my way home from driving class today. So I came home and made this for lunch, and really surprised myself, since it tasted better than I had imagined! The secret ingredient here is cinnamon... don't be afraid to try it!

I made this to satisfy one of my constant roasted-veggie cravings! You won't believe how filling this is; it'll do for lunch along with a fruit or juice, honest! If you like a stronger lemon flavour, use more of the concentrate. The combination of herbs is really quite wonderful, if I do say so myself :-) Enjoy! (Note: Prep. time includes marinating time).

Microwave cooking is great for people in a hurry. Sandwiches like these can be heated in a paper plate covered with a paper napkin; so there's no extra washing up. And these sandwiches are particularly tasty too!

Making sauces is simple in a microwave oven since you don't have to worry about scorching, sticking or overcooking. Occasional, rather than constant, stirring prevents lumping.
