These are a fantastic way to use up rhubarb. They are a big hit in my house hold. I guess you could use apple instead of rhubarb but I have never tried that. One tip when you strain the rhubarb juices don't throw them away; they are delicious mixed in with plain yogurt.
A scrummy dessert combining two of my favourite things: lemon meringue and ice cream--Yum. I make this with shop bought meringues so its quick and easy.

Ive got this cooking in the oven right now!! Its a throw together dish of the small amount of ingrediants that I have left in the cupboard before I go food shopping tomorrow so I hope it works!!
There will be more than enough for one person but Im sure you could make it a meal for 2 if you add a side salad/portion of veggies
