Makes a quick, portable breakfast for those busy weekday mornings. I cook the meat and dice the vegetables ahead of time and store in plastic bags in the fridge, so I can just toss it together in the morning. The measurements listed are guesses; I usually just "eyeball" it.
A real kid pleaser! These are made with brownie mix so couldn't be easier. This recipe adapted from one found on a brownie mix box back in the early '90's. Be sure to use the 21.5 oz size box of brownie mix (store brand is fine); otherwise they will be too runny. This recipe can be doubled.
This is a variation on the traditional cranberry/pineapple salad; red and green layers with a cream cheese layer in between. My mom makes this at Christmas and/or Thanksgiving and I can't stop eating it. Would be good for potlucks, too. Yum!
Quick sweet cornbread recipe. This was DH's late grandmother's recipe. I like it because I can mix it up and be taking it out of the oven in less than 30 minutes. Great with chili, ham and cabbage, dried beans, stew, most anything.
These biscuits are simple, with only 4 ingredients. This came from a magazine clipping several years ago. I usually peel and then boil fresh sweet potatoes, but you can use canned. To peel fresh sweet potatoes without getting your hands all sticky, spray a little nonstick cooking spray on your hands and rub your hands together before beginning to peel them.
This is my favorite homemade pizza; these are the basic toppings though I vary sometimes depending on what's on hand. I make the dough in my bread machine and add a little garlic powder and basil or italian seasonings to the dough ingredients for extra flavor. Some measurements are approximate.
This recipe for dried fruit baked with wine is a family favorite that I got from my MIL. We always have this at Thanksgiving and Christmas; it goes great with ham or turkey. Very easy to make, good hot or cold. Number of servings listed is a guess.

Easy, uses frozen dumplings. Makes a big potful, had to guess at number of servings. I adapted this from the basic recipe on the frozen dumpling box. I always use Anne's Dumplings in the red box (www.annesdumplings.com) but you could use any brand frozen dumpling strips.
