    Very slightlly modified from a WW recipe from the book "Make It In MInutes." The changes I made were not using white wine as called for (1/4 c. white wine and 1/4 c. chicken broth in original), increasing the mayo & Dijon from 1 T. total, and adding oil to the pan for browning. This is really delicious and as quick and easy as promised. One of those recipes that is perfect for a weeknight family meal or for company.

    This is one of our favorite cool weather dishes - it's so good with cornbread! The recipe came from Bush's. It's one I never really tinker with, and that's unusual for me. The ingredients are just right in the original.

    I've fallen in love with my pressure cooker and was anxious to try this. It's now my new favorite way to prepare a whole chicken. This recipe is a combination of ideas I found online, and you certainly could use any seasonings you want. The chicken turns out somewhere between roasted & stewed, and is delicous, tasty & moist. I served it with brown rice tossed with some dried basil & moistened with some of the juice from the chicken. You can have a real feast in 45 mins. tops!

    This recipe is from a long-defunct and short-lived 1980's magazine, "New Woman." It's a delicious and easy soup, and although the recipe doesn't call for it, I like to add cabbage and to spice it up with some crushed red pepper.

    This recipe is the very definition of "meatballs" for me. My brother and I grew up with it, and then my niece and nephew did, too. Make sure the meat mixture is good and cold when you make out the balls and it will hold together much better. This is my very favorite comfort food. Serve with mashed potatoes, and enjoy!
