I adopted this recipe in the recipe adoption of February 2005. The only major change I made to this recipe is to change the cooking method from microwave to oven. I prefer to cook fish in the oven, and it only takes a couple of minutes longer. I also added measurements to the spices. DH doesn't like curry powder, so I made the curry powder optional. This recipe is easy to double for 2 servings.
A few years ago, I saw this recipe in a magazine just before we left for vacation. As soon as we reached our destination, I went to the supermarket and purchased the ingredients. We drank these every day of vacation. That was the best vacation ever!
An elegant appetizer that is so easy! This is a "fork and knife" type appetizer that makes a great first course for a sit-down dinner. This can be prepared in advance and refrigerated until ready to bake.
