    The smoky succulence and fiery heat of roasted green chile is addictive! Use mild to medium chiles, so you can slather generous sauce on eggs, in burritos, over any meat - you get the idea. Very easy to make; chicken broth is the secret to rich flavor. Before thickening, separate out any sauce that will be frozen. Recipe developed at 6500 feet.

    Traditional New Mexican stew, with succulent pork and fiery chiles. Stick to mild-medium green chiles to avoid spontaneous combustion! There are no potatoes (see notes below for adding separately), so extras freeze nicely. Recipe developed at 6500 ft elevation.

    I developed this recipe after struggling for many years with disappointing homemade vinaigrettes. Perfect Vinaigrette Base takes the guesswork out of salad dressings. The correct amount of salt is dissolved into the base, and lemon juice tames the vinegar. It keeps for at least 3 months, refrigerated -- a recycled soy sauce bottle makes a great dispenser. Directions for making a salad with Perfect Vinaigrette Base start at step #5 (I apologize for the confusion this may cause, but I couldn't figure out how to list this as two linked recipes!). It's easy to tweak the dressing to match your salad greens, be they mild or robust, by adjusting the water as described in step #8.

    Wow! Mildly sweet and delicously creamy with a nice strawberry kick. I adapted this recipe from an Italian cooking show on TV (don't remember which one). Be sure to dice the strawberries small, as they're too hard to cut through when frozen. "Cooking" time is actually freezing time. Note: contains raw eggs.
