This is my adaptation of a dish that was put on the table when I went to a Turkish restaurant. I would suggest using fresh feta from a Mediterranean/Greek grocer, packaged feta can be overly dry and salty. I also like to make an Italian variation using Ricotta Salata cheese, which is not the soft cheese used in baked ziti but a semi soft cheese made from sheep's milk. This cheese can be found in supermarkets with a good cheese section or at an Italian deli/Salumeria. I prefer not to over dress the salad simply using a little bit of red wine vinegar and a drizzle of olive oil on top. This is great with grilled meats or fish and great for those hot summer days.

This is a party favorite, even converted many who "did not like" avocados. Recipe is from my friend's family from Mexico. I do not put lime juice in my recipe or jalapeno peppers, I prefer this easy authentic recipe just as is. Depending on the size of the avocados, tomatoes and onions, recipe may be doubled or tripled for larger crowds.

Growing up in a Italian household( dad's from Italy) I never had Garlic Bread. Once I had my own place, I decided to make it. You can serve it with a pasta dish, I am serving it with my steak dinner tonight. You may substitute italian bread for french baguette, however, baguettes tend to be larger and you may decide to adjust your ingredients.Butter may be substituted with olive oil, generously brushed on both sides of the loaf. For a bruschetta style garlic bread, I would add another tomato and dice them instead of slicing the tomato paper thin. Not for the calorie shy, carb addicts beware!

Mostly everyone loves meatballs. There are many different ways and adaptions of meatballs recipes. Here is my own I use to put in italian red sauce. The longer they cook in the sauce the better. Buon Appetito!

    Recipe #94094

This is a typical kid friendly comfort food meal. My own variation of a recipe from a good friend. It is a simple meal to make and great for a cold winter day dinner. If you like cheese as I do, you may add more then indicted below. You may substitute low fat shredded cheese and/or low carb elbows if desired. Serve with a salad and your done!

    Recipe #93915

Roasted potatoes with no herbs but a lot of taste. I came up with this combining several other roasted potatoes recipes I had tried and didn't want all the fuss of using any other ingredients. Good when you just want to use what you have on hand. Fresh ground pepper, kosher salt and butter is a must! Use a large baking dish.

My honey absolutely loves this! Easy to make and not a lot of ingredients. I do stress that you use pork chops with the bone in it. I believe the bone adds more flavor. This should cook for a while so the pork gets tender and starts to separate from the bone. If you choose a thicker cut allow more time for the meat to tenderize. This recipe tends to make a thinner tomato sauce, you may use one can of plain plum tomatoes and one can of plum tomatoes with thick puree for a thicker sauce. Basil should be added at the very end of cooking process. Serve with your favorite pasta and salad. Mangia!

    Recipe #94190

Looking to use up some stuff in my freezer, I came up with this recipe with things I had on hand. It is really tasty and made a great lasagna! There aren't many ingredients, so it's simple to make. You will need a larger pot for this.

    Recipe #100662

A hearty beef stew begging to warm you up on a cold night. The recipe is an original from my kitchen inspired by some Spanish ingredients such as smoked paprika and dry sherry. I think this is best served with crusty bread and a salad. Oh, and I'm not saying this is authentic but it is good! Please make sure you use a large crockpot.
