These are a little dense, not quite light and fluffy, but that is because they are missing the oil and white flour. This dense texture works well with pumpkin though, almost reminds me of pumpkin pie.
You could also candy up some pecans to add to the top.
Full of flavor, protein, and fiber! I remove the stems and blend with the lentils, then add in the mushrooms. Made even better with a sauce, we used tzkitzki but may try horseradish mayonnaise next time.
