Grown-up mac and cheese, though my 1 year old also devoured it! I love the combination of cheese and the subtle flavor from the peppers, onions and garlic. I'm going to add broccoli as well the next time I make this.
I am a sucker for all foods mexican and created this recipe after reading through a lot of others and modifying them to my own tastes and pantry. Excellent served with sour cream for dipping and even better the next day! The sauce is spectacular, adds a whole new dimension to the flavor. Back off the chili powder to make this dish less spicy, or add cayenne to fire it up!

I came up with this recipe after reading about some different brines and basting liquids for turkey breast. The brine in this recipe makes the chicken super tender and the sesame oil mixture gives the meat and vegetables an absolutely mouthwatering flavor! It's amazing the flavor that the chicken, potatoes, onions and broccoli are able to absorb. The star of this dish may be the broccoli, though, which roasts just beautifully.
My own arroz con pollo recipe does not include whole tomatoes due to my family's tastes, but does include tomato paste for that terrific flavor. The use of instant rice makes this a very quick, delicious one-dish meal that will leave you begging for more!
We eat a lot of potatoes, and I was getting tired of the same old thing. This dish is positively delicious! The hot sauce gives it a nice zing without being overly spicy- but if you like your dishes hot, you can always add more!
