I have been looking for a protein bar that is not full of carbs. The following is a my own interpretation of a recipe I found online. You could experiment with other ingredients (i.e., other types of protein powder, coco powder, nuts and seeds, etc...). If you come up with other variations, let me know! :)

    Recipe #402307

When blended, the avocado has such a delicious and creamy consistency, like yogurt or mousse. I have mine without the honey and it's great, but I bet some honey might be good with it, too.

    Recipe #389072

Like mint? Enjoy milkshakes? Haas avocados give this one the texture of a real milkshake. There's NO sugar and NO artificial sweeteners either. When I make this recipe I add ingredients according to taste, so the measurements below are NOT exact... sorry... play around with it 'til you get the taste you want. I've also subtracted the mint oil and sprigs and added orange extract for a "Dreamsicle" shake or added coffee flavoring for a "Frappacino" shake.

    Recipe #418463

This fudge is high in fat, yet full of beneficial oils. It is full of flavor and healthier than traditional fudge. If you are specialty diet or no diet at all, this fudge is for you to enjoy!

    Recipe #399261

Fruit smoothies have been so popular, but they also tend to be high in sugar. Why not switch to veggie smoothies? They provide so much nutrition and flavor without the sugar, naturally. I have been enjoying veggie smoothie variations for breakfast and it keeps me going until lunch time. A note on the flax meal: you can buy it milled at the store or use a separate coffee grinder to grind whole flax seeds fresh).

    Recipe #389453

This is my own, very different, version of the "Easy Corn Bread" recipe off a canister of Quaker corn meal. I have included honey instead of sugar, but added two eggs to help it rise (and add more protein!). The jalepeno peppers add zing. I used just one pepper, but wish I added more. The lentils add texture, as well as protein and fiber for a more wholesome snack, breakfast, or compliment to a meal.

    Recipe #377794

Oat flour is SO easy to make simply using rolled oats and a blender. It's really moist, too!

    Recipe #388922

This is a recipe for Choc-chip Cream Cheese Muffins that I modified to make healthier (i.e., less cream cheese, less sugar, whole wheat) and they taste great!

    Recipe #377796

This is my own version of a pumpkin soup recipe I found online. It is so creamy and satisfying!

    Recipe #402213

This is a recipe I made years ago from a vegetarian cookbook. It not only tastes great with a slight sweetness from the beets, it also has a beautiful color. The recipe calls for dried chickpeas, but there's no reason you can't use canned ones, though remember you would need a lot more than 8 oz if they're already cooked--!

    Recipe #418477

This recipe was inspired by delicious Thai cooking.
