    A very simple recipe for small or baby eggplant. I made this for my uncle and his wife and they raved and raved how delicate it was. Using small eggplants makes it more tender.

    I worked this recipe last summer while I had oodles of fresh herbs growing in the garden. I remembered years ago placing fresh basil under the skin of a turkey I baked for Thanksgiving and decided lets try this with many herbs. It is so delicious the family begs for my rotisserie chickens! You can do this on a BBQ or kitchen rotisserie. You can prepare the chicken earlier and let it marinade in the fridge for the day as well before cooking. It will intense the flavors. I also place the herbs and garlic inside the bird.

    This is a delicious DESSERT! It comes from a friend in Canada who can make squash a zillion ways. This dessert you serve warm with some fresh fruit if you wish and topped with either whip cream or cool whip. It is like a bread pudding but with the disquise of yellow squash.     An EASY quick and delicious meal. I make my own pesto and freeze small batches for meals like this but you definitely can use store bought. You can substitute the Heavy Cream with Half and Half or Light Cream. The sauce is made in a medium fry pan in no time and will sit fine covered until your pasta is done. I suggest Lunguini or regular Spagetti with a nice bottle of dry white wine and toss salad. This will have some calories to it but once in a while splurge! This is worth it. I made this up in less time it took to boil the water.

    This is a very easy and delicious recipe for crepes made in large frying pan. Crepes can be used for desserts or main meals, like shrimp & crab in a creamed wine sauce. I just made for my hubby and I crepes filled with icecream then topped with whip cream with fresh hot blackberry sauce drizzled all over. Came out delicious. Play with fillings and see what you can come up with.

    This is a hardy and healthy pot of soup. You can add other vegetables if you like, like peas or chopped green beans. Occassionally, I'll add a cup of cooked rice, pasta or noodles. A bowl for lunch or dinner will satify anyones hunger or sooth and comfort an ill one. Great way to use up veggies. It is also low fat content because you will cook the chicken without the skin. There are two prep periods but worth a little extra work. Sometimes I will cut up everything before cooking so it is ready to go. Anyone I have served this soup to not only compliments the flavors but feels that old fashioned grandma touch of healing. Smiles.

    A delicious combination of fresh herbs and sour cream for your chips or veggies. You can even make this for over your baked potato. I made this all last summer for company and family while the fresh herbs were growing. It tastes better over time. Herbs must be fresh except cumin for this enjoyable dip.
