i worked in a mexican restaurant back home in cape town, south africa & i just waffled these down on a regular basis! i didn't know exact recipe & have just guessed & reinvented it to come up with an awesome tasting treat of a snack! i've estimated this recipe for one portion, so just multiply ingredients to fit your meal table of guests.
stunning recipe i invented as i went along. was looking for solution to dry skinless chicken breasts compared to succulent meat from whole roast chicken. decided to lob a load of butter in with chicken & slow bake...
this is a bit fiddly cos i made it up as i went along... but it was wonderful & i just had to share it with everyone. basic ingredients most have in their store.
this can be served as a seafood starter or hearty main meal (on its own, even!)
Tasty fruity savoury rice salad. Ideal accompaniment for barbecued, grilled or baked meats & fish. My mum used to make this salad back home in Cape Town, South Africa when we had our braais (bbqs) & it was my favourite salad, crunchy & fruity but definitely savoury. yummy mummy!
