    Size matters when it comes to your pan and properly browning your stewing meat. I use a large 12 inch stew pot. If the cubed beef is too crowded it won't brown properly and steam instead. It's the browning that gives you that rich stew flavor. I usually buy a cheap cut of meat and cut it up in my kitchen. This way I can trim off as much fat as I like and have the size of cubes I like.

    You can add what you like to this quiche. Experiment with different cheeses, meats and vegetables. Excellent choices are leek and soft goat cheese (chèvre), or swiss and asparagus, or cheddar and ham. Use about 5-8oz of cheese and one cup of other material - vegetables and/or meat.

    This is a wonderfully easy recipe from Chavignol, France. The recipe recommends Herbes de Provence, but other herb blends work just as well. This is a recipe for 2 people, but it can easily be multiplied. Enjoy!

    This is Madhur Jaffrey's excellent recipe for what she calls an omelette and I call an egg... pie... thing... miracle. There is no flipping to create a half-moon shape; what you get is a fluffy, flavorful pan-ful of heaven. I only use 2 Tbsp of oil instead of her 5 Tbsp and the result is still amazing. Enjoy!

    This is not just delicious, it is an attractive chili. The yellow corn kernels and the red peppers shine like gems against the dark mahogany of the chili, and if you choose to top it with bright white sour cream, fresh green cilantro and creamy cheese, well, they say that presentation is 90% of the meal!     The flavors in this salad are very bright and refreshing and nicely balanced with the warmer flavor of the gouda cheese. Be sure to purchase plain gouda and not the smoked variety.
