    I know, I know we all have our own favorite pasta salad. They are like, well, I can't say here what they are like, but you get the idea (we all have em, and we all think ours is the greatest!). What I love about them is that we can add and take away and make them our own. After years of making & tweaking pasta salad, I found one I love. This is good cold, but I prefer it to be at room temperature. As a variation, I replace the balsamic with lemon juice and some zest and replace with salami with chunked rotisserie chicken and use parmesan instead of salt and add lots of fresh ground pepper. The dressing is basic but it lets the produce shine though. Make every dish your own! The possibilities are endless! (Cooking time is fridge time)

    A yummy moist cake to use up some of those fresh strawberries. Make sure your strawberries are extra sweet, if not sweet enough, mix with 1 tsp sugar and set aside for 30 minutes. Drain before pureeing.

    Excellent change for those who are tired of the old steamed artichokes with mayo. These are delicious alone with no dip, but, if you must, I find that butter melted with a little lemon zest and juice is a better compliment than the old heavy mayo standby. I know the "servings" says for 4, but, I can eat a whole one by myself!!!!

    These meatballs are totally authentic (other than I have substituted an additional 1/2 lb of Pork for Veal as a personal preferance) and are always served on a Christmas buffet table. They are so delicious I make them year round and I always use the first sauce, but you can cheat and use the second (easier) sauce. I serve these over Egg Noodles with a big plate of green veg (sauteed Haricot Verts with Carmelized Shallot and Garlic or Roasted Asparagus). Yield depends on the size of your meatballs. I use a Pampered Chef Small Scoop and get about 50 or so.

    Excellent on Paula Deen's Crab Cakes. Cooking time is sitting time for flavors to meld! As a note: This is also my spread for Turkey Burgers I just cut the buttermilk down to 1 Tbsp. My husband loves it! Also, the lemon and garlic amounts are up to you. We love garlic, so I usually add 2 cloves!
