Just a simple way to throw together leftovers and come out with some down-home comfort food. I've included two different ways to do this pie. You only need EITHER the double pie crust, OR the refrigerated crescent rolls, not both.
I was craving this one day when I didn't feel like going to the trouble of making lasagna. So I looked through several cookbooks but none of the recipes I found really hit me, so I kind of combined a few into this concoction. It's very easy, freezes beautifully! I serve it with Pillsbury breadsticks and some sauteed zucchini & squash.
I learned this method from the guys I work with (I'm a paramedic.) It's one we don't have to keep a close eye on, which is important when you can be called on at any minute. Makes the most tender, fall-off-the-fork roast you've ever tasted. The soup and beef broth make a wonderful gravy that goes great over mashed potatoes. Enjoy!
This recipe comes from an old church cookbook of mine. These popovers go great with anything. I like to add a little garlic or oregano sometimes if I serve them with spaghetti or lasagna. You can spice it up any way you like!
