I made these up tweaking a banana bread recipe. We had them for breakfast this morning with boiled eggs and they were so good--even better for lunch. In fact, I think I'll have another one right now. Yum!
This is from our Aunty Ethel who grew up in Hawaii. Our whole family loves it. Its a light and refreshing dessert rather than rich and heavy. You can find coconut milk in the Asian food section of your local grocery.
My sister-in-law gave me this recipe years ago. We used to bake a batch up and smother them in butter cream frosting and eat and eat and eat them. Oooh, they were so good. They can be used for cut outs as well but the dough will need to be refrigerated until workable as it is sticky at room temp. I get a lot of compliments and requests for this recipe.
