I made these up tweaking a banana bread recipe. We had them for breakfast this morning with boiled eggs and they were so good--even better for lunch. In fact, I think I'll have another one right now. Yum!

This is a kid pleaser recipe, especially served with ranch dressing for dipping. We often eat these for lunch along with chips and salsa. For a lower fat version, just microwave them instead of frying. They just lack the buttery crispy edges, but my kids still like them.

I adapted this from Jane Brody's recipe in the Good Food Cookbook. Great starter to any day. Store in refrigerator and wrap and warm in toaster oven for 10 minutes. May be frozen as well. Yum!

I eat a lot of salad and I know that a dressing can make or break my enjoyment of one. I never use bottled dressing, YUCK! I like them fresh and preservative free. My husband especially likes this one. Not sure where it came from. Always use good quality ingredients!

A healthy, sugar free, treat! This recipe uses an all natural sweetener product called Stevia Balance with Inulin & Chromium, found at your local health food store. Inulin is derived from chicory which actually stimulates the growth of friendly intestinal bacteria and has a low glycemic index which is good news for the sugar sensitive system.

This is a quick and easy, yet tasty weeknight meal that my kids enjoy. My niece introduced me to it and I have tweaked it somewhat. This is the only way she will eat broccoli.

I woke up late and had to be at a Christmas brunch at 10:00. Since I was supposed to bring something to share, I "scrambled" to throw something together. As it was, I was about 30 minutes late, however, my casserole was devoured and the recipe requested before Christmas so some could make it Christmas morning. I went ahead and made another one for my family this morning. So upon request. . .
