    I love this cake--and it IS indeed moist. From Pamela Westland's "Celebrating Christmas." It is so easy to make. I baked it in a giant gingerbread man pan and decorated with colorful dragees--beautiful! You might consider doubling the recipe, since it makes a small cake.

    From "The Spirit of Christmas Book III," Leisure arts, 1989. Made it for 2009 Christmas party—delicious, and not too "fruity." People who don't like fruitcake loved it. It has the most delicious scent when you unwrap it that remains until the last slice is eaten. I believe it took mine no more than 2 hours to bake. Keep an eye on it, so the cake won't dry.

    I love blue cheese and cranberries. This is DELICIOUS and I make it every Christmas. Got it from a "Diamond" ad in a 2002 magazine. (To say that the filling of this pie, that has blue cheese, tastes like "stuffing" is beyond me...)

    This is my version of the famous (and effective) 7-Day Soup Diet. The secret of this soup is low(er) carb veggies—like kale, watercress, turnips, pumpkin/squash, carrots, chayote, chards, chicory, okra, rutabaga (very low carb), brussels sprouts, chiles—use your imagination! Day 2: the potato seemed like a blessing from God. Day 4: mashed bananas with milk + honey/splenda. Day 5: the combination of steaks and tomatoes was divine. To salads or fresh veggies I added a little bit of extra-virgin olive oil and balsamic vinegar. (Servings reflect only the days you eat the soup.)

    Pvt Amys Mom's "Quick Chile Relleno Casserole" inspired me to make this variation. Using whole wheat flour will result on a denser dough, but still soft. It is absolutely delicious--hot or cold!--and not so spicy. (If you want an even milder taste, use green bell peppers.)
