    My most-requested dessert recipe. Moist brownie bottom topped with a thick peanut butter filling and topped off with a chocolate glaze. Please watch the brownies carefully and remove from the oven when toothpick comes out with moist crumbs clinging to it. If your toothpick comes out completely clean then they are overbaked and you will end up with a "cake-like" brownie. Glass pyrex baking pans have yielded the best results in my experience. Note: This recipe doubles beautifully!

    You won't believe how easy this cake is to make. When you present it to your guests, I promise you will receive "oohs and aahs". It is beautiful to look at and absolutely scrumptious to eat.     These are done completely on a gas grill and is the first recipe I have found that result in tender ribs without having to boil/steam/ or bake them first. Don't lift the lid for at least an hour while grilling! That is the secret to these ribs that end up tender and delectable.     This is as close to my mom's recipe as I can get with actual measurements since she eyeballs the ingredients and never measures. It is a "classic" version, and not the spicy or pineapple version you so often see in Thai restaurants. She is a native of Thailand and owned her own fantastic Thai restaurant for many years. This recipe is one of my favorites because it is so easy. The key is to use leftover, cold, jasmine rice and Thai fish sauce ONLY, no soy sauce or it will be Chinese fried rice.     This is the cookie that has made me sort-of...slightly....kind-of famous. :) Co-workers always ask for the recipe and guests at my home never believe that they are home-baked because they are so nice and puffy but still flavorful, soft and chewy. I sent these to my husband many many times while he has been overseas. After we have moved to a new duty station, his former shipmates have gone so far as to email him and ask if I can send them a care package with "those" cookies. I consider that a huge compliment since by the time they get them they are over a week old! :) I would ask that you please follow the directions exactly, including the chill time. It is what guarantees a puffier, tender cookie. I have included the chill time in the preparation.

Note: This quiche is heavy on the spinach, that is how we like it, if you do not care as much for spinach and want more of an eggy filling, you may use less spinach.     These pork chops are tender, juicy and mildly flavored. Don't worry, the bbq sauce adds a minimal bbq taste, and if you'd like a stronger bbq flavor use more sauce! My husband normally doesn't like pork chops, but this is the only recipe in which he will eat and enjoy them. If you refrigerate the chops an hour or two before baking, the coating will end up a bit more crispy on top. But, if you are pressed for time like me, just spray the tops with cooking spray and broil until crispy after they have baked.

    This is the ultimate family favorite desert. It is my Aunt Norma's specialty and I remember getting so excited to go to her house for Thanksgiving or Christmas and feast on this pie. I added the melted white chocolate and dark chocolate drizzle to "fancy" up the looks of an otherwise unattractive pie. But once you taste it, you won't care what it looks like. The baking is a little fussy in that the time varies with your oven and knowing when to take it out is tricky. If you bake it too long the filling will cool and harden, if you don't bake it long enough the filling will be soupy. Its done when the top looks dry and the outer portion is set while the center still shakes a little bit like custard. NOTE: The filling is actually a tad underbaked in my photo, the optimal texture is a little more dry, I should have baked it for a few more minutes but nevertheless it tastes MARVELOUS either way!

    This recipe is courtesy of Bobby Flay and it is fantastic! It is very simple to put together but has wonderful flavor for such minimal effort. When in a hurry, I have skipped grilling/blackening the tomatillos and serrano and just sautéed them in a hot pan until softened and the skins were slightly charred and it still tastes great. I highly suggest you blacken them on the grill if you have time because it adds a beautiful smokiness to the tomatillo sauce.

    This recipe comes from Tyler Florence and makes the most magnificent and delicious ham we have ever tasted! It is beautiful when it comes out of the oven and the aroma while its cooking is just heavenly. I am posting the recipe as Tyler has written it, however, when I prepare this I make a few changes to lower the sugar and fat content in the glaze which are as follows: I reduced the butter to 1/2 cup unsalted butter and 1/2 cup smart balance spread; I reduced the brown sugar to 1 cup and added 1 cup of splenda mixed with a few tablespoons of sugar free maple syrup. I reduced the water content to 1/2 cup and only had to simmer for an additional 15 minutes to get the syrup texture. The substitutions work well, but I am sure this original recipe below will blow you away!
