    This stuff tastes just like Tapioca pudding! I wanted to make rice pudding, but didn't want to make a huge batch. Also, I wanted to start with already cooked rice and have no eggs or evaporated milk on hand. This is a VERY simple adaptation, low-fat, and turns out beautiful and creamy. This recipe can be quite easily doubled or even tripled if desired, just expect longer cooking time.

    I know, it sounds crazy.And I'll admit, I was definitely skeptical. But these are delightful, VERY low in fat, and VERY high in fiber and protein. Trust me on this one, once they've come out of the oven, NO ONE will be able to tell these are based on white beans!

    I was tired of trying eggless cookie dough recipes that didn't taste like the "real" cookie dough we all love and adore. I found that as long as you aren't baking them, simply substituting milk for the eggs works out perfectly! Also, I've tried cutting down on the margarine a bit and it turns out fine. This recipe can be quite easily doubled, tripled, whatever, depending on how many people are in the mood for cookie dough... P.S.- try freezing in balls or spoonfulls!

    I first tried this for a culture project and it was absolutely fantastic! I make a smaller batch, but that's because I'm a college student, but this can be easily doubled or tripled for more people. I also have no spaetzle maker, so I just spooned a portion of the batter onto a course cheese grater and pressed it through with a spatula. I also wore an oven mitt so my hands weren't burned by the steam as I held the grater over the pot. It's a little tricky at first, but as the batter sits in the grater over the pot, it gets a little thinner and will drip through easily as you press it. Also, I don't have any authentic cheeses, but mine turned out splendedly with grated cheddar and mozzarella.

    I adapted this recipe to fit my naked pantry and fridge. Also, I freeze hamburger in 1/2 pound blocks, so I needed a smaller recipe that didn't use a whole pound of ground meat. This makes about 16 meatballs, but I like to make 32 mini-meatballs! These are delicious and flavorful- enjoy!

    Looking for the perfect pancake? I promise, this absolutely tops all. My mother spent years tinkering with different recipes and finally came out with this winner! I've made them full-fat and fat free and they always turn out to be phenomenal! These pancakes can really stand on their own feet, but feel free to tweak to your heart's desire with cinnamon, nutmeg, extra vanilla, or fun add-in's like blueberries or chocolate chips.     This peanut butter ball recipe was a product of my going off sugar for lent. It also has no powdered milk (I don't have powdered milk like everyone else calls for.) I'm staying off of any powdered, granulated, or substituted sweeteners. Honey is my only permissible sweetener and I needed something peanut buttery/ cookie-doughy so this is what I came up with. Enjoy! P.S. you can use generic peanut butter, but you will probably want to cut back on the honey.
