My dear friend Carolyn adapted her Breakfast Casserole recipe to my veggie needs, the result was this recipe --- excellent for pot lucks, brunches and the like. Can be experimented with veggie bacon or sausage, perhaps vegetables, use your favorite cheese and bread, this is just a simple version.

I think a vegetable added to these would taste better, but I have not figured out what kind yet. Sandra added mushrooms to hers, but I cannot deal with the fungi.

I think it could be made with less margarine in the batter with a little more applesauce for a lower fat content.
If it's spinach, it must be good!
Easily veganized with appropriate substitutions; I also sometimes nix the cereal and use a mixture of half wheat bread crumbs/ half ground flax seeds, increases the fat content but its good Omegas.
