    This is the second casserole I have developed with essentially the same ingredients. I think the end product of this one is better, but I want to leave the other one posted in case someone has saved it to their cookbook and expects it to be the way it is. I came up with this one after trying mine and another similar casserole only to find the "cream of" soup to be the dominant flavor. The sauce in this one has an improved flavor, yet is still very easy.

    I originally found this recipe in a Duncan Hines holiday insert from some magazine. I have no idea how old it was when I found it, but it was 1993 when I made the discovery. Knowing my grandpa loved coconut, I decided to make these for his Christmas gift. HE LOVED THEM!! So what did I do? I promptly lost the recipe during a move! I searched and searched for it, but was unable to find it. I very recently got the recipe, except it was not complete as it quite obviously did not have enough liquid. I made the cookies and guessed 1/3-1/2 cup of oil would be about right, and it was. This was originally made with Duncan Hines Golden Sugar Cookie mix, but it seems they no longer make that... I successfully substituted the Betty Crocker 17.5 ounce version with no problem.

Posted with her permission. :) This stuff really is as delicious as she said! This is such a colorful snack and would be pretty for Easter or a baby shower. Recipe an easily be doubled or tripled.     In my world, chili is whatever you want it to be - no rules, no arguments. I've had many people question whether or not this is "real chili" when they see it, but once they taste it they're just too busy eating to worry about it. This is a good basic recipe that can be easily modified to suit your taste. This is delicious as leftovers, but will be thicker the next day as the macaroni will absorb much of the liquid. It is VERY good this way, or you can add water when reheating.

    This is the one recipe I always request that my dad's mother make for the holidays. I've never had another pineapple pie to compare and, believe me, I've looked. This is a GOOD pie. Her sister always gets two of these for her birthday - one for her and one for everyone else! LOL I finally got the recipe when I got married and I could hardly wait to share it. (Now if I can just get the recipe for her crusts...) This pie is good cold or at room temperature and is DELICIOUS while still slightly warm.
