    When I first saw this salsa dip at my mom's house, I thought I would hate it - chick peas? It is SO good. It is always among the first to go at tailgates and cocktail parties, and I'm always requested to make it. It is super easy, and it's the perfect tailgating/barbecue dish because none of the ingredients require refrigeration.

    I had this at my dad's 50th surprise birthday party over ten years ago! I went home that weekend and made my own version. You can layer pretty much whatever you want - diced tomatoes, lettuce (I don't use lettuce because it doesn't stay crisp when you have leftovers), etc., in whatever amounts you want. Tastes best if you prepare it the night before and it "marinates" over night. Also tastes great heated and spread on a tortilla for fast burritos!

    I went home with a friend in college around Christmas time and his mother was making this - it smells SO good when baking, and tastes even better! Definitely NOT low-fat... You can make it whatever size you want - muffins, small loaves, etc...anything works! Just make sure you reduce the baking time for smaller portions. They're great for holiday gifts for neighbors, co-workers, etc.!

    My dad sent me this recipe when I told him I was going to the Mediterranean deli almost everyday for hummus! I leave out the cilantro entirely when I make it, and I play around with different flavored vinegar or oil - my favorite is to use chili-flavored vinegar and balsamic vinegar! Experiment and let me know how it turns out!
