    Carla's winning dish from Top Chef All Stars. I love Top Chef, but it's rare to see a vegetarian dish (unless the challenge is to cook for a vegetarian and then all the chefs complain), much less a vegetarian dish that wins. Got the recipe on Bravo's website. I'm putting it here for safekeeping. I have o idea how many this serves or how long it takes, so I guessed.

    I came up with this when I had precious little in the pantry, less still in the fridge, and was too lazy to go to the grocery store. Sometimes when I'm feeling adventurous, I throw in a can of drained and rinsed black beans and some salsa after I've blended it.

    This came from Vegan Soul Kitchen by Bryant Terry. The recipes all look fantastic, but this is the only one I've actually made. It's ridiculously easy and delicious. I made it once from the cookbook and haven't looked at the recipe again in the multitude of times I've made it, so maybe I'm leaving out ingredients. Regardless, it's spicy, comforting, soulful, and oh-so-good-for-you.

    This is something I threw together last minute to take to a family brunch when I was notified that the only vegetarian dish on the menu was Mimosas. It ended up being a huge hit. At a former job, I made it once for a potluck and my coworkers ended up requesting "that weirdo vegetarian salad" for every subsequent potluck. You could easily adapt this to include whatever veggies you have on hand. Sometimes I add cauliflower if I've got some hanging around in the fridge. Preparation time includes the time to cook the quinoa, but not the time to cook dried beans as I almost always use canned.

    We all know the benefits of cranberry juice, right? How it keeps the nasty little bacteria from sticking to your insides? Sounded great to me, but it turns out that some of the cranberry juice blends don't contain enough cranberry juice to do any good, so I started buying 100% cranberry juice. 100% cranberry juice is vile, but nothing a little liquor can't fix. And it's good for you, too! Well, maybe not for your kidneys but when was the last time they did something nice for you?

    I got this from an issue of Vegetarian Times when I was in college longer ago than I care to admit. It was from an article on 15 minute meals. As I recall, all of the recipes were pretty good, but I've since lost that issue and this is the only recipe I can remember. I made it for my mom and she loved it so much, it became the de rigueur Christmas Eve soup. It's stupendously easy and sooooo delicious--hearty and warming on a cold day. I only make it during the cold months because highly-flavored sweet potatoes (or yams, if that is your preference) are essential.

    I found this on Jamie Oliver's website. Haven't made it yet. I'm posting it here for safekeeping. The wording is all Jamie's; I would never use "knob" as a measurement. I also have no idea what a banana shallot is so I shall use plain old shallots when I make this soup. It's vegetarian if you, duh, use vegetable stock and vegetarian (i.e., anchovy-free) worcestershire sauce. The prep and cook times are guesses because I can't post a recipe without including times.

    My 11 year old stepdaughter requests this recipe regularly. Cream of potato soup is one of her favorite things to eat. I wanted to make something that had less fat and calories and more vitamins and fiber. This is what I came up with. My stepdaughter often tops it with croûtons and Bacos (surprisingly vegetarian!).
