    This is a culmination of spinoffs from several different recipes. They were so yummy, I had to write it down. It looks long, but that's mostly marinating time and cutting-up vegetables (which you can do while the meat is marinating and the rice is cooking), so you can easily do everything in about an hour or so. An impressive appetizer or wonderful light dinner. Even my anti-vegetable 6-year-old ate them! So after receiving my first review about not using marinades, I looked into the matter and have changed the recipe so that you discard the marinade and use fresh marinade when cooking the meat. Thanks to my learn something new every day!

    Ah, my maiden recipe! This is what I came up with for dinner tonight. I was looking for a recipe that went this way, but couldn't find one. All the flavors are to taste, of course. I love cilantro, so there's a ton of that and the sweet/tart flavors will vary based on your fruits' sweetness, etc. It also occurred to me as we were eating it that some pineapple tidbits would be a wonderful addition to this. I hope you enjoy!

    I was recently sold on quinoa and how awesome it is! Gluten free, an almost perfect protein, easy to prepare, the list goes on! This is a combination of two recipes, one of which I altered. The first is from this site, (#16399, Quinoa-Toasted). The second is from (Caron's Kickin' Quinoa Salad), to which I made some changes. We thought it tasted a bit like sushi and loved it! Feel free to add more heat, but this had enough for our family as we've got wee ones. A large portion of the cooking time is cooling time.
