    From January 2006 Southern Living. We had this for dinner last night. At first taste, I thought it was just okay; by the time I got it to the table, though, it tasted really good. I had the leftovers cold for lunch today, and it was just as good as last night. I used about 2 oz of feta, and I used a deli-roasted chicken.

    I love the way they make Chicken Marsala at Carraba's. I came up with this as a copycat version. It's not grilled like theirs is, but you could, of course, grill your chicken. I'm just lazy. ;-)

    When I became a vegetarian, one of the things I missed most was chicken enchiladas with salsa verde. I came up with this chili in my quest for a good substitute for those flavors. I especially like it with Mexican cornbread. Prep time does not include soaking time.

    Fast, simple, and delicious--great for a busy weeknight! Just add a salad and bread. During the summer I puree fresh basil and freeze it in ice trays, and that's what I use in this sauce. However, you could use 1 teaspoon of dried basil if you have to.
