My partner has been put on a low cholesterol, low sodium, low fat diet so I have tried to find and modify recipes to make our meal plan more interesting. This one has been a hit (requested regularly) so I thought I would share it. I serve with brown rice, wholemeal pasta or mashed potato.
A simple yet versatile 3 ingredient cake which can be decorated, or used for cupcakes and butterfly cakes. I use one 7 inch tin then split in order to sandwich with butter icing Recipe #305948 and jam (I prefer strawberry but my mum prefers raspberry.) Best to warm the jam slightly before spreading, ,makes life easier.
I came across his adaptation of a classic whilst I was a student, and still love to make this dish. Sometimes for a change I add other veg such as diced carrots/courgettes etc at the same time I would add the mushrooms.
