    My new favorite, go to meal. It's quick and good for you. I sometimes just make couscous and then make a salad with tomatoes, cucumber, olives and feta to go with. Serve w/ a side of hummus and perhaps pita bread.

    Found this in Real Simple Magazine. It is sooooo good. Good enough to serve to company, but fast enough to make on a weeknight. This just might be my new favorite. Serve with fettucini, salad and a nice fresh bread.

    Found this in an advertisement in Real Simple Magazine and thought I'd give it a try. It's simple and the whole family enjoyed it. I used Trader Joes pizza dough instead and sprinkled parmesan cheese on top before putting in the oven.

    A little dense than a regular frittata as there is stuffing in the recipe. I have also made this using frozen spinach or shredded zucchini instead of broccoli. I also use fresh broccoli and blanch it before adding to recipe. It's perfect for a light dinner or Sunday brunch.     Not sure where I received this recipe, but it's perfect for a quick weeknight supper. For some reason, I always have a jar of spaghetti sauce in the fridge that I need to use the remainder of or throw away. Sometimes I add a bit of Italian seasoning for extra flavor. This dish cooks in one pot, so there is minimal clean up. Also, it's much healthier than Hamburger Helper.

    This is a inexpensive and hardy soup. It's a little different than the other Italian pomodoro soups I've seen in that it has white beans in it. It can easily be a meal all by itself, or you can add a green salad and have a great meal in no time.
