I adapted this recipe from bestliferecipes.com. I wanted to increase the fiber a bit and added pears.. I think the taste is great and it's a recipe for one. I cook up the chicken breasts on the weekend and divide them into 4 oz portions. It can be thrown together in no time!
Use summer fruits and fresh veggies to make this sandwich. Whole, real foods that are great tasting is a great way to add something delicious and healthy into your diet. I use ezekiel bread (food for life) which is a sprouted whole grain bread that is free of flour and a complete protein.

As always adjust quantities to your families preferences. (Things are happening simultaneously - time from start of meal to finish is 45 minutes)
This is a simple variation of a Weight Watcher recipe that is low fat, low cal, recipe the whole family can enjoy. You can use fat-free ingredients if you want but I find it more flavorful and less "diety" using low fat.
Served this with quiche at a dinner party. Everyone said the same this "I wasn't sure about the first bite but by bite three I was hooked" the gorgonzola has a bit of a bite - so adjust amount to your taste. Recipe from Meals.com
