Wonderful way to easily prepare a pork tenderloin. I found this in the local newspaper and it was described as "heart healthy". The sauce adds quite a kick! The recipe calls for unsalted stone ground mustard, but I had the regular stone ground mustard on hand and used that.
This recipe comes from Cooking with Herb Scents Cookbook that was given to me years ago. It is labor intensive, but a great dish to be served for a special occasion or for company. Definately a keeper!
A full flavored soup I found in Cooking Light magazine years ago. It can be frozen in smaller portions prior to adding the tortillas and cilantro. I have also added grilled chicken strips at the end to make it more hearty. It's easy and has a great flavor!
very easy and light quiche I have been making for years! I have recently begun using 2 bags of baby spinach and have "wilted" it in the saute pan on top of the sauteed onions. I have also added broccoli or fresh sugar snap peas along with the spinach. Serve with a salad and crusty bread for a nice light meal.
Here's a warm, hearty, easy to prepare soup for those chilly days of winter. If found this recipe in a Senior Spotlight newspaper. I used skim milk and fat free, low sodium chicken broth. The cheese I added for zip! (so much for extra calories, but it was worth it!!)
