    I made this one night when we had several "odd" ingredients handy and the vegetarians were gone. This is a fast and easy recipe that even those who don't like casseroles liked. You can easily add more or different seasonings or different kinds of beans. I served this with Lebanese Grilled Bread.

    Very easy and yummy! I buy a whole pork loin then cut it up into meal-size pieces, wrap each piece in wax paper and stick it all in a freezer bag. This time I had pre-sliced one piece into strips, so it was really easy to thaw the package in the microwave and make this dish quickly. Also, if you store your ginger root in the freezer it is easy to grate with a serrated knife or a vegetable peeler. If you cannot find mirin, you can substitute dry sherry or orange juice.

    This was one of those "gee, what quick meal can I make out of what's in the house" recipe. Leftover turkey in the freezer; turnips, carrots and celery in the fridge, and a packet of instant mashed potatoes (the cheesy kind) in the pantry . . voila! It came out really well (even the picky 12 year-old ate it!) You can certainly substitute ingredients based on what you have at hand, but I wouldn't change the spice mix -- that really makes the dish.

    My husband likes the idea of eating tofu, but not the actual texture of tofu, so I developed this recipe for him. He and the children love it! I usually make it as a complement to low-protein vegetable dishes. The chips are great hot, but they can also be eaten at room temperature or cold from the refrigerator.
