I don't remember how I came up with this recipe but my family and I really enjoy it. The green beans come out a little crispy but still tender. I started making this when I was on weight watchers. One serving is only 1 point!
I found this in an old issue of cooking light and modified it by using fat free sour cream and adding sundried tomatoes, but roasted red peppers work equally well. I like to serve this with toasted sourdough slices. This keeps well in a crock pot on warm for parties.
I got the idea for this recipe from #39087 and expanded on it. The recipe for slow roasted tomatoes is from Delish.com The roasted tomatoes give this sauce a really great, rich flavor. I usually make a bunch and freeze them for later. Way better than sun-dried tomatoes.
