    Grits Toast With Creamy Mushroom Topping

    I am not overly fond of grits but I saw Paula Deen making these canapes and they sounded wonderful. After grit toast is baked, they can be covered and refrigerated to use later. Chopped shrimp and be added to the topping if you like. Time does not include chilling time. I really liked these and would be great to make for guests. I made the topping ahead of time except for the onion rings so they wouldn't get soggy. I added them as I was making the final product. I did cut the recipe into one third for two people so I could try them. I made the grits about 1/4 inch thick. and put about a tablespoon of topping on.

    Perfect Eggplant (Aubergine) Parmesan Secrets

    I don't like mushy eggplant so had to develop my own recipe. I've checked in Zaar and although there are some close to mine, there is just enough difference to make it worthwhile posting. When I'm having spaghetti, I always make enough sauce and freeze it so that I can have eggplant the following week or so. I don't peel eggplant but that's your choice.

    I saw this in a magazine and tore it out but don't remember what magazine. Was in a doctor's office. I'll post the ingredients as they were written but I made a couple of changes when I made it. For the jalapeno and tomato.. I used a 10 oz can of Rotel which I drained. I added some canned Manderin Orange slices at the end. I also added a couple of tablespoons of ginger syrup (recipe #123111). The end result was outstanding. I served it with shrimp scampi.

    I have been trying to find a recipe that would be close to the muffins at Mimi's restaurant. This one is the closest I have found and they ARE yummy. Found at Cooks.com. If you don't have buttermilk, just put two teaspoons apple cider vinegar in two cups regular milk and let stand for 15 minutes.

    RSC #7 June 2005. This is my first experience with couscous and I hope Evelyn is proud of my results. It's easiest to use a tart pan with a removable bottom or a spring form pan and press dough up the sides about 1 1/2 inches. I had about 1/2 cup left over which I put into muffin tins and filled. Dough can be covered and refrigerated overnight. I can't put this in the recipe, but you can serve this with ice cream, or chocolate sauce, or whipped cream, or fruity yogurt, or.. or... or.....

    Savory Shrimp and Couscous Pie

    RSC #7 June 2005. It took me a few days of tweaking for this one. I tried it as little individual pies and then as one big pie and I liked the big pie better. If you want to make more tomatoes then I have listed, they can be stored in olive oil in an airtight jar and refrigerated. You'll love the flavor of them. You can use larger shrimp, but they should be chopped up a little. Use a pan 9x13x2, lightly oiled. The crust and filling don't need to come to the top of the pan. When you place the cover crust on just seal with a fork. Cooking time does not include 4 hour baking time for tomatoes. Or you can buy sun dried tomatoes.

    Vegetable Soup With Eggplant (Aubergine) Dumplings

    I have a 10 year old grandson who would rather eat soup for dinner then anything else.. AND it doesn't matter what kind of soup. So I get to use him as a taster and he knows the star system. He said this was a keeper for sure. You are welcome to use more garlic or spice depending on your taste, but this way is good. One good size eggplant should cover both the soup and the dumplings. Time does not include draining time for eggplant.

    Fiddlehead Fern is picked in the spring when they just pop out of the ground and are still curled looking like the head of a violin. They grow in the northeastern part of the USA and in eastern Canada. Being in Nevada I never expected to see these luscious delicacies again but you can see I was wrong. Trader Joe's had them and I grabbed a package very quickly. The recipe is one I just put together with what I had available. Didn't want to take the time to go to the store for anything else. You can buy sundried tomatoes packed in oil... yum.

    I found this on the internet somewhere and it said you could wrap the loaf tightly in plastic wrap and chill it overnight. Then you could actually cook it in your rotisserie. I tried that and it didn't work lol. So I followed their directions for making a loaf. It was delicious. I will include the directions for rotisserie but don't holler if it doesn't work. Time does not include draining yogurt, or chilling loaf overnight.

    These are lucious little loaves cooked in a muffin tin. You can chop the scallions, cilantro, lemongrass and garlic together in a food processor to save time. This recipe needs no salt or pepper. You can buy Thai Peanut Sauce already made, but I've included a recipe in case you like making your own. Judge the hot pepper by your own tastes.

    A delightful addition to that Friday night family pizza. Found this at Guide to Southern Food. If using fresh strawberries, mash, sprinkle with sugar, cover, refrigerate for 2 hours, and add 1/4 cup water when cooking. I had unsweetened frozen strawberries and added 3 packets of splenda while cooking.
