    I came up with this recipe trying to replicate lettuce wraps offered at Joey Tomato's. So far, I've determined, there are a number of elements that make the perfect lettuce wrap. A balance between savory taste and crunch - which is given by the combination of soy, hoisin and chiles accented by the addition of crispy noodle. I am sure this recipe will continue to evolve as I experiment with other flavors.

    From Fat Girl Trapped in a Skinny Body... Browning brings out the richness of the butter. Go ahead and try a little spoonful from the pan, see, now you know what I'm talking about. The nutty, salty, sweet, milky flavors are all enhance. The brown butter and the brown sugar really give the loaf a depth of flavor that can't be achieved form just using regular butter or white sugar. It is worth the effort of using 1 extra pan to make the brown butter, it is TOTALLY worth it! The 'crust' has a perfect slight crunch, and the inside, wow, I literally can't stop eating it. It isn't overly sweet either. It is sweet yes, but not like a cake. But it is buttery like a cake, PERFECT!

    The inspiration for this recipe is from Starbucks as they use to have the best dark chocolate raspberry cookies which, unfortunately, they no longer offer. This is my version of a dark chocolate raspberry fix. Plus only good things can happen when your batter tastes like ganache!

    This recipe is a modified version of the Williams Sonoma copykats out there. I've tweaked it because, living in Canada, I can't do the imperial to metric switch off the top of my head.. and like most chocolate confections, I needed to add a few changes, IMHO, to make this recipe closer to the real thing. Here's my version, would be glad to hear your thoughts :) BTW, I choose wafers (the ones that you can get from the bulk section at Superstore) because it's easier to melt. My only advice is when it comes to chocolate is not to get anything too rich or too sweet (aka Lindt) because the sweetness will overpower the delicate mint flavour.
