    I found this recipe on the Idaho Bean Commission web site, and it's a keeper. Next time I'll add some corn, but otherwise this is really tasty and you won't miss the meat. I didn't use cooking spray or the oven--just cooked on the stove in a little butter. I skipped the sour cream because I didn't think it needed it.

    This is easy to whip up on a weeknight, and quite good (especially when it's cold outside). I substituted green peas for the creamed corn and evaporated milk for the half and half, and I left the skins on my potatoes. The amount of butter wasn't listed in the recipe, so I used 1/4 cup.     These are heavenly. I used extra jalapenos and a lot more cilantro than the recipe calls for because I don't think you can have enough cilantro, but I'll post the recipe as written. I skipped the cheese, sour cream, and salsa and still really loved this. I don't know why I never thought about making eggs with beans before--I'd pick this over sausage or bacon most days of the week. Serving size is estimated. YUM!

    This has fantastic flavor--absolutely love this. Feel free to substitute fresh chard for the spinach or mint for the cilantro. Serve with tzatziki and bread and/or a tomato salad. I used fresh spinach and doubled the recipe. Recipe courtesy of Spilling the Beans.

    I may have discovered the best peanut butter cookie recipe. The only thing I would change is less sugar--they're a little sweeter than I like. I found this recipe on foodthoughtsofachefwannabe.com. She found one of her mother-in-law's heavenly recipes but the measurements for the ingredients weren't listed. She experimented and came up with this, and they are delicious.

    I made this with regular potatoes and left the skins on. I didn't use low-fat milk or reduced-fat sour cream (I don't care for either one). I did use turkey bacon instead of regular bacon (it's what I had). This is quick to prepare, and very flavorful--difficult to stop eating. Absolutely love it.
