This is a healthier version of the Tex-Mex classic. Also great for the vegetarians in the group!

A really good breakfast (or snack) muffin. The cornmeal adds a different texture. I made these for a Thanksgiving brunch (with dinner served late in the day) one year and they disappeared!

The canned beans make this an especially easy last-minute side dish. I also like it as a light lunch (with a salad and crusty bread).

Chile con Queso made with Shrimp!! This is a winner at our house! I sometimes use the smaller salad shrimp (purchased frozen at Sam's club) and don't chop. Add more jalapeno or hot sauce, to taste.

This is like a modified quesadilla. I like the buttery taste of the crust with the spice of the filling. I often used leftover grilled chicken in this recipe. If I use fresh salsa in the filling, I omit the additional tomatoes.

This is more of a technique for differently shaped cookies than a recipe. Of course, your own favorite Chocolate Chip Cookie dough can be used instead of the purchased dough. The cookie bakes up around each kiss in the muffin tin. It is almost like a chocolate filled cookie. The recipe was adapted from Pampered Chef.

A tart and refreshing salad that compliments most meals. Very easy! Prep and cook time does not include chill time.

    Recipe #80535

A very impressive cold appetizer. The color of the oranges and spinach really brighten up a buffet table. My guests loved this appetizer and devoured them all. Adapted slightly from a Creme de Colorado cookbook.

This is a Tex-Mex twist on the veggie pizza. The wreath is a nice presentation for the holidays, but the crescent rolls can be rolled flat and baked for a more traditional pizza-type crust. I use my own fresh salsa for the topping (on the side), but a chunky bottled version would work. The chipotle chiles add a nice heat to the creamy layer and their amount can be adjusted to your tastes. This recipe is from a Pillsbury appetizer cookbook.

I adopted this recipe after Mean Chef (IHHDRO) left the site. I have not yet had a chance to sample this, but will add my own comments when I do.

    Recipe #79497

I adopted this recipe after Mean Chef (IHHDRO) left the site. His original comments were, "A simple party dessert which is a year-round opportunity to use the season's best and ripest fruit." My comments submitted as a review when I first tried it were, "Excellent chocolate fondue. I cut the recipe in half and prepared it with Ghirardelli Semi-sweet chocolate and heavy cream. Hubby and I ate an entire pound of strawberries dipped in this luxury while watching movies tonight." I have made this many times since for just Hubby and I, and for guests. It is a very good chocolate fondue.

This is a thick and hearty potato soup. It really satisfies a hungry appetite on a cold day. I have prepared the soup and left in a crockpot on low for several hours.

This biscuit-like bread is great served with chili or beef stew. I have stirred roasted garlic into the dough, but it is good as is. Another very easy recipe to make dinner a little easier.

I adopted this recipe when Mean Chef (IHHDRO) left the site. I haven't yet tried it, but will submit my own comments or amendments when I do. This recipe is originally from Robert Del Grande.

An easy and yummy appetizer. All seafood lovers gobble these up. This is a slight adaptation of a Pillsbury recipe.

My love of cranberries led to me to adopted this recipe. I think that it is the perfect fall pie with the crisp tartness of the berries shining about the sweetness of the apples. Original poster's comments: "Found this in the Sunday paper in the coupon section and it's become a huge hit. I'm not usually a fan of cranberries, but I like the flavor of this pie! I hope you like it, too!"

This is a crisp seasoned snack that offers an alternative to chips or nuts. The seasoning can be adjusted to personal taste.

This is from a Pillsbury cookbook of Bake-Off Favorites. It was a 1971 finalist. I have often reduced the recipe to 2 or 3 pork chops (and kept the "stuffing" amount the same). I found that butermilk-type biscuits work better than the layer-type. Also, most cream soups (mushroom or celery) can be subbed for the cream of chicken. This is hearty main dish that can paired with a vegetable side and fresh fruit for a complete meal.***Editted to add that I have tried the recipe using boneless, skinless chicken breasts instead of the pork chops. Yum!! I did add a bit of chicken broth to the soup mixture prior to pouring it over the chicken, though. I thought that the chicken wouldn't release as much liquid as the chops did. It was a great meal.

This is an Ina Garten recipe from the Barefoot Contessa Cookbook. My husband is fussy about his meatloaf, but really likes the texture and flavor of this.

    Recipe #77992

This is an easy recipe that produces a tart and soft cookie. I believe that it was clipped from a Taste of Home magazine several years ago.
