    Asparagus Spirals
    Handle

From the December 2008 / January 2009 issue of Every Day with Rachael Ray. So simple that it almost really isn't even a recipe.

    Recipe #347080

    Apple Cherry Brie Appetizer
    Handle
    1 Reviews |  By ms_bold

From November 2007 Holiday Appetizers & Mini Desserts cookbook from Pillsbury.

    Recipe #347078

    Select
    Chocolate Peppermint Thumbprints
    Handle

From the Dec 2008 / Jan 2009 Fine Cooking magazine. Prep time includes chill time for dough. Cookie has a delicate, almost shortbread texture with the hint of mint in the filling balancing the richness of the chocolate.

    Coconut, Shrimp, and Corn Chowder

From the April 2006 issue of Real Simple magazine.

    Faking It Monte Cristo Sandwich
    Handle

This is from the April 2007 issue of Real Simple magazine. The recipe capitalizes on the convenience of frozen French toast to create this rich and decadent classic sandwich. I like my Monte Cristos served with a little cup of raspberry preserves to dip or spread on each bite.

    Tomatoes With Lemon Thyme
    Handle
    1 Reviews |  By ms_bold

This is so simple that it is almost an embarrassment to post as a recipe. I snagged the idea from the August 2007 Martha Stewart Living, and loved the combination of the herb and the fresh tomatoes. She suggests that placing this salad in the sun for 20 minutes before serving will help the individual flavors meld. That is one thing that you wouldn't want to do with potato salad. LOL (Cook time is the time for flavors to meld.)

Spaghetti With Peas, Zucchini Ribbons, and Garlic Shrimp

This is a combination of 2 recipes from the April 2007 issue of Martha Stewart Living. Each can certainly stand on its own, but together, they are a fabulous meal. Add a salad, possibly some crusty garlicky bread, and dessert and it would be complete, company worthy meal that is actually very, very simple.

My Version of Rachael Ray's Chinese Spaghetti and Meatballs
    Handle

After seeing this recipe on an episode of 30 Minute Meals, I decided to tweak it a little to suit what I had on hand and what I knew would work in my house. It's a fairly simple (although, I won't claim that it only takes 30 minutes...nothing ever does, does it?) meal that is pretty healthy with the lean protein, the whole grain, and all the veggies. Although as with any Asian inspired meal, the soy sauce does account for a lot of sodium.

    Asparagus Popover
    Handle
    4 Reviews |  By ms_bold

From the May 2008 issue of Everyday with Rachael Ray. This is super easy and makes a quick breakfast, lunch or dinner. She suggests that for a change, you may want to sprinkle cooked bacon into the batter.

Seasoned Pork Roast With Mushroom Sauce

Recently, my area experienced a blizzard that knocked out power for almost a full day. While I had my gas stove for cooking, I didn't have access to the internet to search for recipes. I had to resort to sifting through my cookbooks. I found this gem in a Junior League cookbook, and after modifying it slightly to suit ingredients I had on hand, Hubby proclaimed it worthy of repeating.

Sugar Snap Peas With Pine Nuts and Garlic

Recently, my area experienced a blizzard that knocked out power for almost a full day. While I had my gas stove for cooking, I didn't have access to the internet to search for recipes. I had to resort to sifting through my cookbooks. I found this method for preparing sugar snap peas in the Perfect Vegetable cookbook by Cook's Illustrated. The veggies are crisp and bright with the depth and earthiness of the pine nuts and garlic. Great side dish.

    Recipe #298321

    Select
    Pear and Raisin Crumble
    Handle

This is from the March 2008 issue of Bon Appetit magazine. I had picked up 5 pounds of fresh pears at Sam's Club and decided that a simple dessert was in order. Being a non-baker, the simpler the better, and this recipe really suits my no-fuss style without compromising flavor. Such a comfort served warm with vanilla ice cream.

    Fennel and Parsley Salad
    Handle

I found this on the epicurious.com website, but they credit Donna Hay's Instant Entertaining as the source. I plan to serve it as a side dish with a baked ham. It is an interesting and fresh blend of flavors.

    Barefoot Contessa's Fresh Pea Soup
    Handle
    8 Reviews |  By ms_bold

Earlier, I had posted Recipe #285307 after watching an episode of Ina Garten's show on the FoodNetwork. Now, I have finally tried the Fresh Pea Soup from that airing and found that I love it, as well. I prepared this with frozen peas, and while the original recipe did call for mint, I didn't have any on hand and omitted it. Pea soup may make some people's heads spin, but this is so good. Pairing with the flavorful Roasted Red Pepper Sandwich would be an incredible meal.

I had seen Ina Garten prepare this sandwich on one of her Barefoot Contessa episodes. It looked to die for, and when I finally had time to try it, my suspicions were confirmed. It is so flavorful and just down right yummy. She also prepared a Fresh Pea soup to pair with it, I can't wait to try that, too.

    Tilapia With Creamy Leeks
    Handle
    5 Reviews |  By ms_bold

I found this on the Epicurious website, and my husband loved it served with buttered garlic noodles and steamed green beans. The original recipe called for Pollock or Pacific cod, but I always have Tilapia on hand for this easy dish.

    Cherry Galette
    Handle
    1 Reviews |  By ms_bold

I discovered the ease of Recipe #94405 recently, and my non-baking self fell in love. When I was overloaded with sweet cherries, I had to find a galette recipe to use them. This is an adaptation of a recipe found at an online wine site. That recipe used a homemade crust, but I think that the part of the appeal of the galette for me, aside from satisfying my sweet tooth, is the ease of using the refrigerated ones.

    Easy Cheesecake Lemon Bars
    Handle
    4 Reviews |  By ms_bold

Recipe was found on the side of a box of Pillsbury Moist Supreme Lemon Cake Mix. I debated about posting, as there are similar recipes already in the Zaar database that use powdered sugar instead of the canned frosting in the cheesecake layer. I prepared these as a quick, last minute offering for Hubby to take to a local function, and didn't get to taste myself. However, he told me that my pan was one of the first things empty on the dessert table. I hope that means they were good. :)

    Goulash Soup

Goulash was a staple of my mother's menus when I was growing up. I found myself craving it one day and threw together this soup for a quick and hearty meal.

From the May issue of Everyday with Rachael Ray. This is a Spanish version of an American classic. I love the kick of Recipe #82944 and reach for that recipe often, but this is something just a little different for an easy dinner.
