I wanted a healthy alternative to boxed rice dishes, so with a little trial and error I came up with this recipe. It's my husband's favorite rice dish now. I like to sprinkle the rice with slivered almonds.
I'm always looking for ways to "healthify" recipes. I try to decrease the amount of fat and sugar and increase the amount of fiber. Sometimes it changes the texture or flavor so much my husband won't eat it, but when I can modify the recipe and my husband doesn't even notice then I know the recipe is a keeper! I adapted Quaker Oatmeal's "Vanishing Oatmeal Raisen Cookies" recipe to lower the fat and increase the fiber (and my husband didn't even notice!) For less sugar and even lower fat, I sometimes substitute Splenda for the granulated sugar and EnerG egg substitue for the eggs.
I modified a recipe Mexican-style rice recipe I found on here and it turned out great. My family really loves it and hopefully you will too.
The tomatoes I use are the Western Family brand. You could substitute regular diced tomatoes, but it won't have the same great flavor. (Those chipotle spices really make a difference!) You could also substitute 1 cup frozen corn for 1 can of corn.
