"This has been a favorite for us for a while now; who knew replacing those awful salty box mixes would be so easy? I highly recommend doubling the recipe if you are serving your family; my DH and I alone can go through the amount this recipe makes. Also, I typically add a little bit of cumin, garlic powder, and chili powder to add a tiny bit more kick."
"I make this all the time as a side dish for Mexican type foods. I've used it IN burritos as well. It serves 4-6 as a side dish. Make sure to use a chunky salsa not an esp thin one to prevent excess liquid. This can be made in a crock pot. If you have a large family it's easy to double. If you do make this in the rice cooker make sure to use a US measuring cup for your rice and water and not the cup that comes with your rice cooker (it's not a standard cup). Thanks Mom!"
"This is great! I cooked my rice a bit longer than the recipe called for to get rid of some excess liquid. I definitely recommend using salsa with a low salt content for this dish. Thanks for sharing!"

Since then, I use whatever salsa we have in the house because it's just so easy!! I usually substitute chicken broth for the water to give it a bit of a fuller flavour."

"I just made "Fiesta Rice" by Audrey M, and it is very similar to this recipe except it uses Minute Rice. I loved it, and now that I found this recipe I can make the same rice using two different methods! From now on, I'll make this for sides with dinner, and the other for when I just want a quick snack! I used Mild salsa as well (and it was plenty hot!) and used long-grain white rice. It was just enough for one serving- I, too, made it as a meal. Thanks for sharing!"
"It hasn't happpened with me in a long time now because life has really stressed me out, but, as soon as I saw this simple recipe, I knew I had to make it rightaway for dinner for myself. I just did make it for myself and I love it! I would just like to state that it's enough for just 1 serving, and not 4-6 as has been stated. It's really tasty! I used Mild salsa to make it and long-grain white Basmati rice. Very very enjoyable. Thanks a bunch! "
