"I found this recipe on a low carb recipe site and I served it last night (my husband has been begging me to make Jambalaya and I finally found a low-carb version). It was excellent, easy to make, and had a nice kick to it (I added extra hot sauce, which might explain why it had a nice kick to it :-). If you are not eating low-carb, then I am sure you can add some rice to it (or serve it on top of rice). Enjoy!"

"Really really good! I made a couple of substitutions, I swapped carrot for celery and chicken for shrimp. I also used diced tomatoes with chilies. Excellent flavor and easy to put together!"

"We thought this tasted great - 5 stars from both of us. We substituted boneless, skinless chicken thighs for the shrimp and put in about 3/4 to 1 teaspoon of the hot sauce. The kids gave ratings of 1 and 4 stars, but that may be due to being a little hotter than intended. Next time we'll use the listed amount of hot sauce and just add more in our individual bowls when serving."

"YUMMY!! I found this in someone's low carb cookbook and gave it a whirl. I had a small can of diced tomatoes with jalapeno and a small tin of diced tomatoes. I threw in a can of green chilies and a whole pound of shrimp. It was SPICY, but the exact right amount. I absolutely love this dish, as my family did too.
