About This Recipe
"Arriving home late last Friday evening I was searching for something quick to make for dinner and was inspired by the margarita ingredients which my husband had placed on the kitchen counter..."
Ingredients
- 3/4 lb halibut steaks
- 1/3 cup freshly squeezed lime juice
- 3 tablespoons tequila
- 2 teaspoons olive oil
- 1 tablespoon chopped cilantro
- 2 cloves garlic, minced
- 2 teaspoons brown sugar
- 1 teaspoon freshly grated lime rind
- 1/4 teaspoon Pickapeppa Sauce
- salt and pepper
Directions
- Mix marinade ingredients (all except fish) in a plastic container large enough to hold fish in a single layer.
- Add halibut and turn over.
- Cover and refrigerate for 30 minutes, turning at least once.
- Remove fish from marinade and pour marinade into a small saucepan.
- Bring to a boil, reduce heat to simmer, and cook for 5 minutes, stirring often.
- Remove from heat.
- Grill halibut over medium-hot coals for about 4 minutes per side, or until fish is done in the center.
- Serve marinade sauce over fish.
